* Goat’s Cheese Pasta by Susan Clift

8 Roma tomatoes
1/4 cup torn basil leaves
400g pasta of choice
1/3 cup olive oil
2 sliced garlic cloves
2 tablespoons lemon juice
4 cups of rocket , roughly chopped
2 tablespoons chopped parsley
1/3 cup grated parmesan
100-150g goat’s cheese
Peel tomatoes , cut in half and season with ground pepper and basil leaves and roast at 160 in oven until soft . Cook pasta until al dente , drain and keep warm . Heat olive oil and garlic until it sizzles then add to pasta with tomatoes, lemon juice , rocket, parsley , and parmesan . Serve topped with crumbled goat’s cheese . Buon appetito!
