Ingredients for 2 loaves
2 cups “raw” oats [ie not instant!]
1 cup plain flour
3-4 tbsp baking soda
1 – mashed – banana [or more if you particularly like the flavour]
2 pears – peeled, cored and chopped into small pieces
2 apples – peeled, cored and chopped into small pieces
[You can leave the pears and apples fresh, or you can steam them a few minutes in their own juices, or in a bit of orange juice – but not so long that they go mushy]
Hand full of sultanas [or more – or less – as you like]
¾ – 1 cup of plain yoghurt
¼ – ½ cup of orange juice [depending on how dry the mixture is)
For a sweet’er tooth add a bit of honey!
Keep mixing all ingredients really well until all the oats are mixed through the fruit – otherwise you get boring lumps of just sticky oats!
Place in two lined (baking paper) loaf tins. Bake in 150oC oven for 1 – 1½ hour [yeah, I know – Margie told me about an hour, but it took 1½ hours in my oven!]
When cooked, put the tins on a board and cover them with foil, tea towel, whatever for ½ hour to cool [this keeps the moisture in whilst they cool down] – then turn out on a rack to cool completely. You can now scoff one down, whilst you pack up the 2nd to put into the freezer for later!
The combinations of fruit are pretty endless, but you always have to use pear [well, that’s what I was told!], but I’ll be happy to hear of new combinations that work for you!
