* Quinoa and Beet Patties by Batchi Mazor (overseas contestant)


  • 1 cup quinoa
  • 1 1/2 cup water
  • 1 / 2 tablespoon olive oil
  • 1 / 2 teaspoon salt
  • 2 medium beet, cooked for 15 minutes, peeled and grated
  • 4 tablespoons whole wheat bread crumbs/ oatmeal
  • 1 carrot, grated
  • 1 / 2 bunch chopped parsley
  • 3 stalks green onion, finely chopped
  • 1 teaspoon salt
  • 1 / 2 teaspoon black pepper
  • 1 / 2 teaspoon ground coriander seeds
  • 2 organic eggs
  • 3-4 tablespoons olive oil

1. Cook the quinoa- for this recipe I boil water with 1/2 tbs of olive oil and 1/2 tbs salt, add the quinoa and cover the pot for 20 minutes, turn off the stove and let it rest for an extra 5 minutes.
2. Preheat the oven to 170 degrees
3. Mix all the ingredients together, and create small “burgers”, make sure your hands are wet all the time, it’s easier to create them.
4. Place on a slightly oiled baking paper and put in the oven for 25-35 minutes!

Great with yogurt or tehina

  1. It has good flavors. I probably didn’t grease the pan enough, so the patties got stuck on. I will modify that next time. Thank you for posting the recipe.
