Savoury Salmon Flan
  • 2 cloves garlic, crushed
  • 415g can red (or pink) salmon drained, flaked
  • 4 green shallots, chopped
  • 1/2 cup self-raising flour
  • 1/2 cup grated tasty cheese
  • 3 eggs, lightly beaten
  • 1 cup milk
Combine garlic, salmon and shallots in bowl;spread over base of lightly  greased 22cm pie dish.
Combine sifted flour, cheese, eggs and milk in bowl – mix to smooth batter. Pour batter over salmon in dish. Bake in moderate oven about 45 min or until lightly browned and set.
Serve with:
  • green beans,hazelnuts and vinegar cream
  • teaspoon of butter
  • 1 clove garlic, sliced
  • 1/2 red onion, chopped
  • 500g green beans, topped and boiled for 3 min, drain
  • 120ml pouring cream
  • 4 sprigs parsley, chopped
  • 3 sprigs tarragon, chopped
  • sea salt and freshly ground black pepper
  • 1 tbsp balsamic vinegar
  • 55g toasted hazelnuts
Melt butter in frying pan over medium heat, add garlic and onion and cook for about 2 min. Add beans, cream and herbs and simmer for 1-2 min. Season to taste and add balsamic and nuts just before serving.
