Ingredients
- Take 3 tomatoes from one neighbour
- Take 3 cucumbers from a second neighbour
- Take 3 red bell peppers (or capsicums) from a third neighbour
- Take a few sprigs of parsley from a forth neighbour
- Take one purple onion from a fifth neighbour
- Grow 2 scallions (no neighbour has it!)
- Lemon juice of one lemon (from the neighbours tree)
- 2 tablespoons for extra virgin olive oil (you must have this)
- Sea Salt and Freshly cracked pepper to taste (and this)
Instructions
- Say thank you to all the neighbours
- Finely dice all the vegetables into very small squares
- Mixed them in a serving bowl
- In a cup mix oil, lemon, salt and pepper
- Pour over vegetables 10 minutes before serving
- Invite all the neighbours for lunch or dinner 🙂
Serve with:
- Main meals
- Techina and Hummus and Pita
- Labane (creamy sour white cheese) drizzled with olive oil and sweet paprika)
Eat as:
- A great snack with tuna
- Lunch – Sprinkled with pumpkin seeds, sunflower seeds and a cup off quinoa
- Part of your breakfast with 2 boiled eggs, slice of hearty wholemeal bread and cottage cheese
Ok you practice and start making sure your neighbors become farmers or shop a lot.

Oh what a great idea – in the meantime I have printed these recipe’s and will try them out this week= I have people staying for the next few nights and I just loved that one of your Dad’s – I have to go and visit the neighbours and see what they are growing ha ha – Yolanta next door often comes in with zucchini & lemons = I wiill suggest the items on your dad’s recipe for her to grow so I can borrow them and then they can come in for dinner.

Wow, that is just amazing and I love the story that goes with it – what a way to meet and mix with your neighbours- certainly a must try – I love all that food already. – yes, I agree Mira, he should get a prize it is so versatile, healthy, colourful, good variety – all thrown in with kindness and generosity.
how do YOU cook the quinoa – I have some in the cupboard having just discovered it.
